Ingredients

Instructions

  1. Preheat oven to 400°F.
  2. Halve the acorn squashes and scoop out the seeds.
  3. Brush inside with olive oil, sprinkle with salt and pepper.
  4. Roast squashes cut side down for 30 minutes.
  5. Mix quinoa, cranberries, walnuts, and feta in a bowl.
  6. Turn the squash cut side up and fill with the quinoa mixture.
  7. Return to oven and bake for another 20 minutes.
